Another thread discusses Chinese food that has to some degree re-invented itself outside of China. Cooking tips and recipes have their own forum. There will necessarily be overlap, so don't fret about whether you are addressing the right forum. When in doubt, post here.

Don't blame me, blame the scholars who anointed the cuisines of eight provinces as the "Great Eight" and seemingly withheld recognition of the many non-Han cuisines of the North and West.
